Cookies and desserts!!!!

Ok, so we are having a dessert bar at the reception (partly because we love desserts and cookies, and partly because we couldn't afford to serve dinner.) :-P

I want to get started ASAP on some things that freeze exceptionally well. So far, I am planning pumpkin rolls, Oreo bark, homemade Reese's cups and chocolate chip cookies.

Just so no one goes into diabetic shock, there will be fruit trays, veggie trays, and maybe a meat and cheese tray? but I have to price those this week.

Does anyone have any ideas for spectacular, easy desserts that freeze well? Any favorite cookie recipes?

And... is there anything I'm forgetting?

Oreo truffles.

Grind up (in a food processor for easy work) 1 bag or oreos. Mix in 1 package of soften cream cheese and roll into bite sized balls. Freeze until hardened. Melt chocolate (whatever kind you like, but dark chocolate is better so it's not too sweet) in a double boiler. Dip frozen oreo balls into chocolate. Refreeze until hard.

These should keep for a little while in the freezer, just make sure you take them out to thaw in the fridge a few days ahead of time.

You don't need a meat and cheese tray, but a cheese and crackers tray would be really nice, just to get something salty to counterbalance all the sugar.

As far as desserts go, trifles would be fun, you could bake the cake part now to freeze. A cheesecake bar would be great too, depending on the recipe, I'm pretty sure you can freeze cheesecakes.

Oh and I'd always welcome quick breads, like banana bread or maybe cranberry to be more festive.

Bakerella.com has a lot of easy, fun, and adorable recipes (including the aforementioned Oreo truffles). We ended up pretty much nixing the dessert bar, but I was looking at several options from there.

Also, for protien at dessert receptions, I love a nut butter bar. You can go to a place like Pavillions or Whole Foods and get almond butter, cashew butter, sunflower butter, walnut butter... Mighty tasty. Since the premade butters can get a little pricey, you can also make your own:
