So I am getting together with friends for an Easter dinner potluck-style on Sunday but I have to work for 2 hours beforehand. This means that whatever I bring cannot be cooked right before I go. I was thinking of bringing a large cold salad of sorts, that way I can make it the night before or that morning, put it in the fridge, and when I get home from work just grab it and go. The problem is I only know 2 recipes for cold pasta and/or veggie salads, and neither is sounding too appealing to me at the moment. One consists of tomatoes, hunks of mozzarella, and avocado pieces all coated in italian dressing. The other is something having a lot of peas and little bits of ham. 

Anyway, does anyone have any good pasta salad recipes that I could make for my easter dinner? I'm meeting with a group of about 10 people and as I said, I have to make it the morning of or the night before the dinner due to time restraints.

Not a huge pasta salad fan

Ramen noodle salad is my go-to: pre-chopped bag of cabbage + shredded carrots (can also buy these pre-shredded) + small bunch of green onions sliced thin + Neuman's Own Lite/Low Fat Sesame Ginger salad dressing (about 80% of the bottle).  Stick in the fridge for a few hours then when you get home crumble up a packet of ramen noodles and mix those in (toss the flavoring packet).

What about a desert salad? 

Apple Suprise Salad
2-3 Granny Smith Apples, chopped into chunks
1 whole container of Cool Whip (the normal size)
3 Snickers bars, chopped up (easier to chop if you freeze them for a bit first)
Combine all ingredients
