Quick! Side dish suggestions

I'm making an herbed pork tenderloin tonight.  I have some broccoli I'm going to steam, but I need something else (preferably something healthy) to go with it.  I'm at a loss.  I thought rice, but I didn't know what kind...maybe some roasted red potatoes?  Any suggestions of something that would go well?

    Cut up some red potatoes (unpeeled), some sweet potatoes (peeled), and some baby onions (or regular onions into smaller pieces).  Toss with olive oil, dijon mustard, some salt and pepper.  Spread on baking sheet and roast.  WIN!

    EDIT:  I like to add fresh thyme too, after they come out of the oven.  Sprinkle it over the top before serving.

  • I don't like sweet potatoes (I know, I know!), but FI loves them.  Slub's suggestion sounds like a good compromise!

  • take potatoes and slice them into 1/8 in rounds, add onion, season, nix with a bit of oil, pour into an aluminium foil envelope type thing, throw on grill for about 20 min, or until potatoes are cooked, eat out of foil, throw foil away...no dishes to wash

  • I love rice as a side. Instead of just boiling/steaming it in water, i like to use broth and herbs in it

    Yeah, I really don't like yams but I've gotten ok with the white kind of sweet potatoes.  I've been trying to mix them with red potatoes more because the sweet potatoes are definitely healthier.  :)

  • Oh man! I was going to suggest a veggie dish I make all the time but I saw you already have broccoli lined up. I'll tell you about it anyway in case you ever want to use it and if you like asparagus.

    I take a can of the Del Monte asparagus, drain it and sautee it in a skillet with a tbsp of butter (or a butter substitute), some pepper and some garlic or garlic salt (depending on what you have. After about 5 minutes I sprinkle in some sliced almonds. and let them sautee with the asparagus for 3 or 4 minutes.

    That's pretty much it. It's quick and easy and I think it tastes really good.
  • Potatoes with lemon butter.

    My dad used to make salt potatoes (I think it's an upstate NY thing). They're little, new potatoes, and you boil them in water with los of salt and serve them with butter.

    Well if you ever make the asparagus for your man, then let me know what he thinks. I actually just realized that the recipe I gave you (if you could even call it a recipe) is on the lable of the Del Monte asparagus can, haha.

    For a second I thought I was really clever but uh yeah, not so much.
