Pork Loin Recipes?

I've never actually cooked one, but they were on sale for a super cheap price, so I bought 2.  One of them is defrosted, but I have no idea what to do with it.  Ideas?

I have some basic stuff in the house, but nothing too fancy.

  • Pork loin is very lean, so you need to make sure it doesn't dry out.  We cook ours low & slow in the oven, covered in foil.   Or you can cut it into chops/medallions to bake, broil, or cook in a skillet.

    If you have all day, you can put it in the crockpot with a jar of green chile sauce (or broth) and then shred it.

    I like to slice them in medallions and grill them or sauté them in a bit of oil and make a mushroom gravy.

    It's also good marinated a little Worcestershire, water, brown sugar, tomato sauce, garlic, and cider vinegar with salt and pepper and a touch of cayenne.  Then just broil it for about 10 minutes on each side.

    I do the foil in the oven thing usually. I like herbs like rosemary with pork. Or dijon mustard.

    Not any more.  It was a flight of fancy years ago and while I love to cook, I didn't love the hours.  Now I just do it for friends, family, and myself.  I actually enjoy it now.

    I LOVE dinner parties!  How fun!  Do you think you will do themes for each party?  What's your favorite:
    *Homestyle dish
    *hors d'oeuvre
    *dessert
    *fowl
    *use of eggs
  • Last week my theme was moroccan. 

    I like the idea of use of eggs. I made what ended up being my first ever soufflee the other day (by accident)...

    Homestyle is always good too. And I love apps. 

    But yeah, definitely by theme.

    and as for themes: 

    If I had a redo of our wedding (yes, I know, I haven't even been married a month) I would have done one of these three things: a brunch buffet, Finger Foods only (both sweet and savory) or an Asian-fusion menu (which I posted one on here).

    But alas, one thing I have definitely learned on TK is that you only get one wedding. So dinner parties will have to suffice.

    You only get one wedding, but as my husband likes to remind me; you can always have a garden party or a holiday soirée.

    I love planning things and  parties are so fun.  We had to put off oour garden party this year due to surprise unemployment, so we'll just have to make next year's even better.

    This is REALLY good - the hoisin sauce comes in small jars in the Chinese food section at the store.

     

      Pork Tenderloin with Acorn Squash

     

    Ingredients:

    2 lbs

    Acorn Squash, quartered, seeded, sliced ½” thick, skin on

    8 cloves

    Garlic, peeled, cut in half

    ½ tsp

    Dried rosemary

    Salt

    Coarse

    Pepper

    Freshly ground

    2 lbs

    2 pork tenderloins, 1 lb each

    4 tsp

    Olive oil

    2 tbsp

    Hoisin sauce

    PREHEAT OVEN TO °375, bake 25 minutes. Baste with Hoisin sauce, bake another 15 minutes until pork reaches internal 160°.

    Directions:

    1. Preheat oven, spray large oven roasting pan, minimum 13x9.

    2. Cut squash, remove seeds, slice ½” thick. Leave skin on.

    3. Scatter squash and garlic in roasting pan, pan will be fairly full.

    4. Mix rosemary, 1 ½ tsp coarse salt, ¼ tsp freshly ground pepper and rub in to pork.

    5. Place pork in pan on top of vegetables

    6. Drizzle with olive oil

    7. Roast 25 minutes. Brush with hoisin sauce (may need slightly more than 2 tbsp)

    8. Continue roasting about 15 minutes until pork reaches an internal temperature of 160 minutes.

    9. Remove meat from oven let rest 5 minutes before slicing in to medallions.

    10. Place on serving tray with garlic and any pan juices.

     

  • Apple-Cranberry Pork loin for the crock pot:

    You'll need:
    1 pork loin
    1 clove garlic
    1 cup apples chopped into large chunks
    1 can whole cranberry sauce
    Dash of salt and pepper
    Cinnamon and sugar to taste

    Cut the garlic clove in half and rub loin with it.
    Mince one of the halves of the garlic clove.
    Mix apples, cinnamon, sugar, minced garlic, cranberry sauce, salt, and pepper.
    Pour half the mixture into the slow cooker, add loin, and pour the rest of the mixture over the loin.
    Cook until the meat is fully cooked and tender.

  • I made the best pork roast recently. For a three pound roast, you cover it in a mixture of one cup of applesauce, 1 tablespoon Dijon mustard, and salt and pepper to taste, and then cook it at 350 until a meat thermometer reads 150 to 155, which I think took about two hours for my roast. It was to die for.
