Help me be a good wife and mother

by sharing your favorite crock pot recipes! We are going to the mountains for a weekend trip and I'm trying to come up with a game plan for the food. We are making pizza the first night and will probably grill out one night, but I'd like to do crock pot something or other at some point.

I make an awesome veggie soup and beef stew, but Matt isn't a huge fan of stew (he got sick off of it when he was a kid). We also love to make pot roast, but I'm not really in the mood for that. Any suggestions?

  • Yum! BBQ chicken is definitely on my short list. Do you put the chicken breast in frozen?
  • I'm trying this one today. I got it from the Prevention Magazine 400 calorie Meal guide that I saw by the grocery store checkout. 

    Stuffed Peppers:
    1 lb ground turkey or chicken
    1/2 cup uncooked quinoa
    1/4 cup chopped cilantro
    3 scallions, chopped
    1 small onion, finely chopped
    1 small jalapeño, seeded and minced
    1 glove garlic, minced
    1/4 tsp salt
    3/4 tsp black pepper
    2 cups reduced sodium chicken broth
    1 28oz can low salt tomato puree
    3/4 tsp dried oregano
    2Tbsp chopped parsley (optional)

    Combine turkey- black pepper in a bowl. Cut tops off of bell peppers and scoop out seeds. Stuff each pepper with 1/4 turkey mixture. Replace pepper tops and place in slow cooker. Combine broth, tomato puree and oregano in bowl and poor into cooker. Position peppers so they are covered by liquid. Cook on high 4 hour. Sprinkle with parsley and season to taste with salt and black pepper before serving. 

    Note- all I could find were small green bell peppers, so I bought 5 of them and I'll squish them into my slow cooker one way or another.

    That sounds like fun, I love staying in cabins. We stayed in a cabin in Lake Lure when his daughter got married it was great. I'm researching cabins in Hocking Hills right now hoping we can take a long weekend sometime.

  • I do BBQ pork in mine.  I just take a pork roast/loin/shoulder, whatever is on sale, usually and throw it in there with rootbeer or Coke about 3/4 of the way up.  Then I cook on low for about 6-7 hours or high for about 3-4 hours.  Then drain, shred, add BBQ sauce, mix, and cook on low about 15-20 more minutes.

    I have a really awesome beef roast recipe, but you just said that you weren't in the mood for that.

  • Here's another one from that same magazine that I want to try next week:
    Southwest Corn and Bean Chowder

    1Tbsp olive oil
    1/2 small onion, finely chopped
    1/2 green bell pepper, chopped
    2 cloves garlic, minced
    1/2 tsp ground cumin
    1/4 tsp smoked paprika
    2 tbsp all purpose flour
    2.5 cups reduced sodium chicken broth
    2.5 cups frozen corn kernels
    1 can black beans, drained and rinsed
    1/4 lb ham, finely diced
    1/2 cup salsa
    1/2 cup fat free half and half
    4 tbsp low fat plain yogurt

    Heat oil in large sauce pan over med. heat. Add onion, bell pepper, garlic, cumin and paprika and cook 2 minutes until onion has softened. Stir in flour and cook 2 minutes. Slowly pour in broth, continuing to stir. Broth will thicken. Pour into 4-6 qt slow cooker. Stir in corn, beans, ham and salsa. Cover and cook on high 2-3 hrs or low 3-4 hours. Stir in half and half and cook until heated through, about 5 minutes. Divide among 4 bowls and top with yogurt.

    Though I use just chicken breasts, and I add veggies, use half the seasoning packet (or just do my own seasonings), and serve over pasta.

  • And one more for good measure:
    Lemon, Garlic and Rosemary CHicken

    1 Tbsp chopped fresh rosemary
    3 cloves garlic, minced
    2 tsp olive oil
    2 tsp lemon juice
    2 tsp grated orange zest
    1 tsp grated lemon zest
    1/2 tsp salt
    1/4 tsp black pepper
    1 roasting chicken (approx 3 lb)
    1 cup low sodium chicken broth

    Combine rosemary- black pepper in a small bowl. Remove and discard neck and giblets from chicken and trim excess fat. Loosen skin by inserting your fingers between skin and meat and gently pushing. Rub rosemary mixture under loosened skin and rub over skin.
    Place chicken in 4-6 qt slow cooker. Pour broth over chicken. COver and cook on high 3-4 hours or low 6-8 hours or until thermometer inserted into breast (the chicken's, not yours) registers 170F. Transfer to cutting board and let stand 10 minutes before cutting into 6 serving pieces. remove skin before eating and serve with juices from cooker.

    I'm trying this one today with ground turkey. Sounds easy and delicious--from sparkpeople so it's all healthy and shizz too. 271 calories per serving



    Important: Cooking time should not exceed 4 hours. This is not an "all day" slow cooker meal.

    INGREDIENTS
    16 oz (1 lb) ground beef, 96 % lean
    2 c eggplant, diced (no need to peel it)
    1 jar low-sodium marinara sauce
    1/4 t red pepper flakes
    2 t dried thyme
    1 1/4 c water
    15 oz. ricotta cheese, part skim
    1 T parsley chopped
    1/4 c egg substitute(or 1 egg white)
    1 c shredded Italian blend cheese
    6 lasagna noodles, dried, no boil variety

    DIRECTIONS
    Brown the ground beef in a skillet over moderate heat; drain any excess fat. Stir in red pepper flakes, thyme, tomato sauce, eggplant, and water. In a bowl combine the egg substitute, ricotta, Italian cheese blend, and parsley. Place enough meat sauce to cover the bottom of slow cooker. Top with 2-3 noodles, broken to cover the meat sauce. Repeat layer. Top second layer with cheese mixture and finish with a top layer of the meat mixture. Cover and set slow cooker on low. Cook for 3 1/2 to 4 hours.

  • Pulled pork

    I can of coke
    water enough to cover pork loin
    pork loin
    Rosemary

    Put ingredients in and cook on low until roast falls apart.

    Drain the water/coke mixture

    Add BBq, or taco seasoning cook for another hour, serve on soft taco or buns

    Crockpot Pizza Lasagna
    (my husband's favorite not so good for you recipe)

    Ingredients
    • 1 pkg. pepperoni slices
    • 1 lb hot sausage
    • 1 onion, diced
    • 1 green pepper, diced
    • 1 can mushrooms pieces
    • 1 pkg. lasagna noodles, cooked
    • 1 lg. jar pizza sauce
    • 1 lg. jar spaghetti sauce
    • 1 pkg. each shredded Colby & Mozzarella cheese
    Directions
    1. Use non-stick spray on the crock pot
    2. Cook together sausage, onion, green pepper and mushrooms. Drain.
    3.  Layer this starting on the bottom: spaghetti sauce, noodles, sausage mixture, pizza sauce, cheese, pepperoni.  Repeat.
    4. Cook on high for 2 to 3 hours or low for 6-7
  • So, does it matter if it's coke or diet coke? I put diet coke into a recipe the other week and I'm not sure that it worked as well as I would have liked.

    Shredded Buufalo Chicken

    * 1 package boneless chicken breasts
    * One bottle Franks Red Hot Wing Sauce, plus more for topping if desired
    * 1/2 package of powdered ranch dressing mix
    * 2 tbsp butter
    Rolls

    Put chicken breats in bottom of crock pot. Cover with wing saiuce. Add powdered ranch dressing mix. Cover and look on low about 6-7 hours on low. At thos point, the chicken can be easily shredded with a wooden sppon. Add butter and cook for 5 minutes, then stir. Serve on rolls, and top with more wing sauce if desired (they are hot enough for me without adding more).

    CEW- I think it does matter. I'm guessing the real sugar in Coke helps somehow.

    My favorite crock pot recipe:

    3-4 frozen chicken breasts
    two jars salsa (the stuff with big chunks is best)
    cup or so frozen corn
    2 cans black beans

    Throw it all together and cook on medium for 8 hours.

    You can sub beans/salsa/veggies. Whatever you want.  The salsa will help shred the chicken.  We usually serve over brown rice with some shredded cheddar.

  • Solid.  It's not very soupy/saucy at all, actually.  That's what you need the cheese for :)
