I saw in another thread that you were making homemade mac-n-cheese. Can I ask how you make the cheese sauce? I've been wanting to try this for a while.

  • Oh, and?  When I do it, I just melt milk and butter and shredded or cubed cheese on the stove.  You can probably find a pretty good recipe if you google.

  • I know one ingredient is crack. I've had her mac 'n' cheese, and it's AMAZING. You come to and you have blue hair, you're in your panties and bra, and there's a tattoo of a plaid-patterned flamingo on your left hip. You can't figure out what happened, then you realize it was the mac 'n' cheese the night before.
  • Well, after hearing what Bec has to say, I rescind my advice to google, and strongly suggest waiting for Cew to come post her recipe.

  • I like this one.

    1 pound ziti
    4 tablespoon butter
    4 tablespoon all purpose flour
    2 1/2 cup milk
    1/4 teaspoon ground nutmeg
    1/2 cup grated Parmesan cheese
    2 cups marinara
    1 pound fresh mozzarella
    1 cup grated Parmasan
    1/2 cup bread crumbs
    salt and pepper
     
    Directions
    1. Preheat oven to 375 degrees F. 
    2. Prepare the ziti pasta according to the package directions. 
    3. In a saucepan, heat the butter over medium high heat. Stir in the flour. Cook until golden brown. Add the milk to the flour mixture and stir constantly until thickened, about 10 to 15 minutes. Stir in the nutmeg and Parmesan cheese. 
    4. Drain the pasta and pour into a large 13 x 9 x 2-inch baking dish. Add the marinara sauce, the white sauce, mozzarella, and Parmesan cheese to the pasta. Stir well. Sprinkle the bread crumbs over the top.
    5. Bake for 20 to 30 minutes until bubbly. Turn on the broiler for 2 to 4 minutes to make a crispy top crust.

  • Hi! Okay, so I don't really measure anything and I change it just about everytime, but here you go!

    boil about a half a box of macaroni noodles for about 10 minutes
    while they're boiling, beat six eggs and mix with some whipping cream and / or milk (I think I use about a half a cup to a cup)
    mix some garlic powder in to the liquid
    pour the 3/4 of the noodles into a casserole dish and top with several little pieces of butter
    cover with cheese
    pour 3/4 of the liquid into the dish
    pour the rest of the noodles and top with a little more cheese
    pour the rest of the liquid on top
    cover and bake for 30 - 40 minutes at 350

    Now, you'll have to send me some. :)

    And betrothed, I'm disgusted with most of the comments that you have posted. I don't think I've ever read such judgmental comments in my life. I'm so lucky that the girls I speak to on theknot are nothing like you...I would've never come on here for ADVICE if I would've encountered a big a bitch as you. I genuinely feel awful for your children or your future children, and I think it would be irresponsible of YOU not to invest in their future therapy sessions starting now.   • Ah cew, that sounds awesome. What kind of cheese do you use? I was thinking of doing a 3 cheese blend somehow. Like cheddar, american and provolone or something.
  • It's so yummy. I love the kind with eggs because it's like a casserole kind of. Plus, I love eggs, so there's that. I made it last night and will be having it for lunch today. I usually make it on Sunday because we can eat off of it all week.

    I use sharp cheddar.

    Me too! I am in love with this other recipe. I make it and take it for lunch through out the week:

    Except, I dont' put in the peppers and onions and I use bacon instead of the sausage. Oh and I also use honey butter biscuits. It's super yummy.
  • You know what sucks, is my oven is wonky. So I'm always looking to somehow just make a creamy cheese sauce in a pot on the stove and then just pour it over the noodles and mix.

    I'm definitely going to give your recipe a try cew. I could eat mac-n-cheese all day, everyday really.

    That's my problem too. This recipe sounds so good, and so much easier than dealing with roux.

    I make mac and cheese with a roux.  You have to make sure you keep stirring the butter and flour mixture so it doesn't lump up on you or burn.  I've noticed that it helps if I sift the flour first (so it's not lumpy) and it add it a little at a time.

    If you're looking for easy, this is the recipe I use:
    1 pound macaroni
    1 block cheese (I use sharp cheddar)
    1 16 ounce can diced tomatoes
    A little salt and pepper
    I also sometimes add some ham or bacon to make it a full meal

    Dice Cheese into small cubes
    Cook Macaroni and strain
    Pour macaroni into a baking dish and stir in the cheese, tomatoes, salt and pepper, and meat if you're including that.
    Cover and bake at 350 for half an hour to an hour.

    Edited to fix spelling because 2 people quoted me and I couldn't stop staring at the word "back" when I knew it was supposed to be "bake"

    That sounds delish too. My Mom used to make something similar, but without meat. And then she'd put seasoned breadcrumbs on top and bake it so it had the crunchy texture in there too.
  • It's to die for, LTZ.  I've never really been a fan of creamy mac and cheese because they remind me of the stove top stuff, which I despise, although I am going to try CEW's at some point.

    That is easy, thanks. Lately I have just been cooking the pasta, straining, then throwing it back in the pot and stirring in a bunch of shredded cheese. It is pretty stringy but DS loves it. I don't mind it, if I am hungry but I have been wanting to try out some new recipes.
