Recipe Thursday!

Sorry to jump the gun on your post, LM, but I actually have a recipe I want to share this week so I'm excited! Since next Thursday is Thanksgiving in the U.S., I thought it'd be a good time to share this one.

Sweet Potato Casserole (recipe from my FMIL, who is an amazing cook)

for 8 people

4 big sweet potatoes

4 spoons brown sugar

1/2 cup orange juice
2 spoons butter
1/2 spoon ground cinnamon
1 tablesoon of whisky or any liquor you have

1/2 cup of chopped pecans
2 spoons butter
1/2 spoon cinnamon


Boil the sweet potates with peel on until tender. peel them hot and mash them. Add orange juice, sugar, butter, and cinnamon and cook constantly revolving with a spoon until you see that starts boiling, if you feel it is too dry you can always add more orange juice. Transfer into a baking dish cover with top and bake 350 until you see that it has formed a crust.


* Sometimes sweet potatoes have like strings (fiber) if that is the case, I mash them and then pass them through a striner, couple of scoops at a time.


You don't have to bake right away, you can have it ready and bake it 30 min. before serving, so it will be warm at the time of serving.
