I need your help with dessert options...skip to the bottom if you don't want to read my long, somewhat useless intro...
DHs family has a new tradition for birthdays...the person who is celebrating their birthday is responsible for the meal...it seems backwards but it allows the birthday boy/girl to eat whatever they want and then since there are 7 of us in all, you end up with 6 meals at other times of the year...so far we have done a few of these meals...we have done pizza ordered in, sausages on the bbq, a meal out at a restaurant...so my birthday is on Saturday and I am cooking for mine because a) I like to cook and b) we will treat the family to a dinner out for DHs birthday but we can't afford to feed 7 people at a restaurant twice a year! so...that was a long winded and unnecessary intro to my menu...
There is no theme to my plan. It is literally just stuff I like, jumbled together, in complete randomness...
Apps
- devilled eggs
- three different cheeses with accompanying fruit compote (think goat cheese and fig spread...yum!) with crackers and bread
- summer rolls (filled with tiny rice noodles, carrots, mint, cilantro, avocado, some with crab or shrimp and served with peanut sauce)
Main meal
- Tacos - three main fillings: cajun catfish, organic ground beef, chicken
with soft shell tacos or, for the healthy conscious, lettuce wraps, and then cheese, lettuce, tomatoes, avocado and homemade salsa (tomatoes, mango, peppers, onions, etc) to top them off
- Black Bean Salsa Salad
Dessert
I am considering four options, all from
HEREoption 1 - ice cream cupcakes - I would get one of each of the six types and we could half them (there are 7 of us plus two kids)
option 2 - ice cream cake
option 3 - buy three tubs of ice cream and share
option 4 - buy three tubs of ice cream and make an ice cream bombe (layer three types in a bowl and then invert to serve - when you cut through it you get a bit of all three)
And I decided to make it a poll BUT if you have any other ideas about my menu, like if it sucks, let me know.
