  • We made homemade BBQ chicken pizza.  We used pre-made crust from Trader Joes - so good and it was only $1! I love TJs.  Then just put BBQ sauce (we like the vinegar-y Carolina kind), mozzerella and grueye (sp?) cheese, chicken and red onions on it and bake.  I like to add cilantro, too.

    Also, homemade chicken enchiladas are a favorite here.  My mom has her own recipe that she uses so I can't link it.

    Also, I love pumpkin turkey chili (clicky)

  • Oh yeah, super easy. Just follow the instructions on the bag. I don't even think I did follow the instructions last night, I cook it like rice - twice as much water, bring to a boil, then simmer on super low with the lid on til all the water is absorbed.

    My strategy with stuffed peppers is to layer the inside with stuffing, then more tomato sauce, then cheese, then repeat.

    Also, I am almost 100% sure I would have met my weight loss goals by now if I didn't eat as much cheese as I do. Seriously, I eat a lot of cheese.

    Ditto this.  Quinoa is redonkulously easy to make.  I think I need to do stuffed peppers again.  Yummers.  Derek actual prefers his quinoa slightly over cooked/sorta mushy.  He's weird.

    Jealous! I've been hinting to H that I want a kitchenaid mixer for my birthday. With the extra attachments, obvs.
  • It didn't take me nearly as long as I thought it would to get used to to vingear-y flavor. But, I don't know if I will ever get used to seeing Christmas lights out when it's almost 80 degrees.  And rain in January. The news teased me a few days ago by saying we might get snow showers, but then the forecast changed.  Grrrr.

    <div>I just withheld fresh pasta until I got the attachment (I had the mixer).  It worked :) Just start a "to make when I have a mixer" recipe file and leave it laying around. </div>

  • Oh, if you like cheese and aren't worried about calories, this might be one of my favourite recipes of all times. Next time I make it I am just going to dump some chicken breast in it to make it a main instead of a side:

    Jaime Oliver's creamy leeks. Super decadent and really good. I use it when I have to entertain and people who have never had leeks said it is amazing.

    We are southeast of Raleigh right now, but H works not far from your town.  And we will most likely look at buying houses in your town/surrounding area once I get a job :)

    ETA: I just realized that this could make me look like a psycho stalker. Pirate told me the town name.  I swear I'm not a creeper!

  • Pirate - Sorry about the delay.  The chicken and dumplings wasn't too hard, it was just the last step where you have to take out the chicken, dumplings, and veggies so you can make the gravy with the left-over stock.  That recipie comes from the Better Homes and Gardens cookbook. 

    I prefer the pot-pie way where you cook the veggies, chicken, etc in the gravy and in the oven.

    Sweet potato coconut stew. Honey wine poached pears. Zucchini cakes. Balsamic brussells sprouts. Pumpkin macaroni and cheese. Homemade chicken and dumplings. Pistachio pudding cake. Gramercy Tavern gingerbread. Butter cookies.
