Holiday Baking

Apparently today is my turn to be a pw.  I'm bored, and starting to make my holiday baking list.  I think I'm just going to give everyone (outside of family- they're getting wedding photo albums per request) cookies/bars for Christmas presents this year.

sooo share your favorite holiday cookie recipe. Preferably ones I can make in my new Kitchenaid mixer. ;)

  • Do you have a tart pan?  I like to buy a roll of peanut butter cookie dough, roll it up in balls to almost fill the tart cups, bake at 350 for 8 mins, then take your Tablespoon and push down on each to make a dip in the center then bake for another 6-8 mins.  When they come out of the oven drop one of the small Reese cups in and remove from the pan.  I usually spray the pan with cooking spray so they are easier to get out.

  • I've also made the same things with sugar cookie dough and butterscotch chips.  Of course you could make the cookie dough with your new mixer instead of buying the pre-made stuff.  You're going to love the mixer and find that it will make holiday baking a lot easier and quicker.

  • I picked up the Martha Stewart Holiday Cookies magazine and plan to make a bunch of things from that.  Like Smoky Bacon-Ginger cookies.

  • How about snickerdoodle cookies? They are my favorite cookies. Or what about cake balls? It wouldnt use your new mixer but to mix the cake mix unless you made the cake mix from scratch.  I think Bakerella has some cake balls decorated for the holidays.

    Pumpkin Bars:
    2 cups all purpose flour
    1 teaspoon ground cinnamon
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 cups granulated sugar
    3 large eggs, beaten
    1 cup vegetable oil
    1 cup canned pumpkin
    1 cup walnuts, chopped
    Cream Cheese Frosting:
    2 (3-ounce each) packages cream cheese, softened
    3 cups powdered sugar
    6 tablespoons butter or margarine, softened
    1 teaspoon vanilla extract
    1. For Pumpkin Bars: Combine flour, cinnamon, baking soda, salt and sugar. Stir in beaten eggs, oil, and canned pumpkin until thoroughly combined. Stir in chopped walnuts. Spread batter into an ungreased 15 x 10 x 1-inch baking pan.
    2. Bake in a 325°F (160°C) oven for 30 minutes. Cool and frost with Cream Cheese Frosting, if desired. Cut into bars.
    3. For Cream Cheese Frosting: Combine frosting ingredients in a small bowl; mix until well blended.

    COOKIES
  • These are my favorite cookies to make (<-- clicky)  They're not really holiday cookies but they are awesome.  I make them gigantor style, though, so the recipe makes about 8 humongous cookies.

I'm so lucky that the girls I speak to on theknot are nothing like you...I would've never come on here for ADVICE if I would've encountered a big a bitch as you. I genuinely feel awful for your children or your future children, and I think it would be irresponsible of YOU not to invest in their future therapy sessions starting now.   •                                            Sweet Dream Cookies1 cup unsalted butter1 ½ cups  firmly packed light brown sugar1 egg room temperature1 tsp. vanilla2 ½ cups unbleached all purpose flour1 tsp. baking soda1 tsp. cinnamon1 tsp. ground ginger½ tsp. salt1-12oz package semi- sweet chocolate chips1 cup chopped walnuts 1 cup powdered sugarCream butter.  Beat in brown sugar, egg, and vanilla. Combine flour, baking soda, cinnamon, ginger, and salt.Blend into butter mixture.Fold in choc. chips, and walnuts.Refrigerate until firm (can be prepared a day ahead)Preheat oven to 375 degrees, lightly grease baking sheets.Break off small pieces of dough. Roll between palms into 1 inch rounds.Dredge through powdered sugar. Arrange  2 inches apart. Bake for 10 minutes, cool for 5. ENJOY!!!
