DIYing sandwich trays- how much condiments needed?

Hey, can someone help me out? I'm going to be DIYing a "make your own sandwich" buffet for my wedding. I've figured out how much meat, cheese, etc. I need for everyone, but I'm trying to figure out how much lettuce, tomato, onion, pickles, etc. I would need to make sandwich topper trays. I'm trying to plan for 50 people. I have looked everywhere online and i'm not having any luck. Can someone give me some advice? Thanks in advance! :)

    Next time you go shopping and can use each of those items, imagine how much you would add to a sandwich if you really like that topping. Multiply that by how many sandwiches you plan on your guests being able to make.

    I'm guessing you'll need less onions than tomatoes. I would proably slice up 2 onions at the most.

    Buy one or two large jars of pickle slices, even bulk size if you can. I would think one large jar of mayo would probably be good.
