Do I need salad with this menu?

We are having stations:
Meat carving station with sweet potatoes, red potatoes, and green beans
Asian station with chicken skewers, veggie dumplings, and fried rice
Italian station with made-to-order pasta with options of seafood and/or veggie toppings

I think a salad would be a nice touch maybe a salad bar or simply a tossed salad with the italian station

Ditto, I wouldn't go as far to say it's neccessary but definitely a nice touch.  My first choice would be salad bar but otherwise a nice tossed salad  by the italian food would be a good option.

Agreed that it's not necessary but would be nice to have if budget and logistics allow for it.

i think a simple salad would be a nice addition. to add something crisp and cold to the hot dishes.
