Need Outdoor Wedding Menu Ideas

We are having our outdoor wedding here http://dixonfamilyfarm.com/index.html for approx. 65 people.
We are doing the food ourselves-buffet style
We want a rustic-chic affair, so I don't want BBQ ribs or a cookout.
But it will still be hot in Ohio, even for our 6:30 PM wedding (potential 80+ degrees).
Any ideas on a menu that is not picnic-y?
I'm thinking Salmon on the grill (but not grilling there), but in chaffe dishes and snow peas (not together, but as two items).  I like the BBQ Salmon like they have at Cheesecake factory yum yum.  Need another meat-chicken probably, not sure what though...It's still summer so I don't want it to be too heavy. HELP!!!

    Pork is a really durable, affordable meat.  we are doing a ham with honey Dijon mustard at an outdoor venue.  Other ideas we had were pork skewers or smoked pork chops.

    Oh wow the options are endless and yummy for rustic summer foods.  We are having Chicken and Tri Tip (catered) but they aren't BBQing it though.

    Keep in mind how delicate salmon will be and that is isn't very durable like pp pointed out about pork.  That is going to be hard to DIY and have it come out right.  A caterer can fuss over it and watch the timing it needs - will you have time to do that?
