Chicago-themed wedding appetizers

HI!  We're planning a chicago-themed wedding, complete with chicago style food (think italian beef, hot dog bar, etc.)  We're thinking about appetizers and would like, if possible, to keep with the food theme.  For those of you who grew up in the city and know what an elote is.....what do you think of elotes as apps?  Not foam cup but something more like this Rick Bayless version (link below) where it's served in corn husks.  We were also thinking mango cubed skewers in glasses sprinkled with chili and served with a lime.  Any other ideas are appreciated!

    When I think chicago, two things come to mind, deep dish pizza and the great steak houses.  Mini deep dish pizzas is a possibility as are steak and potato kabobs maybe with onions.

    Living in Chicago I never really think of elotes as a "Chicago" thing, but have them if you want! I went to a wedding with a sort of Chicago theme that had big tins of Garrett's popcorn with bags you could fill up to munch on during the coctail hour, it was fun. Pizza is always great, and I love Magdala's idea of steak kabobs. Along with your elote idea, it brings to mind that Chicago's a great international city for food. It has the second biggest Polish population in the WORLD, and then there's Greek Town, Chinatown... so perogies, baklava, eggrolls...
