Dessert Bar

Instead of serving just cake for dessert, I've decided to have a dessert bar. We're going to have cupcakes, mini cheesecakes, various pastries, and brownies. However, I'm not sure about when to set up the dessert bar. I'm worried if the desserts are put out during the set-up of the room, by the time dessert time rolls around, they will not taste fresh or have melted a little (icing on the cupcakes and tarte filling). What do you suggest? Is it ok if we set up the dessert bar earlier in the day, or should it be done during cocktail hour?

    I did a candy buffet at my wedding and my boss did a dessert buffet at his wedding and in both cases the buffets were set up after dinner, around or after cake cutting time.  So if that is possible, that is what I would suggest.

    We did cakes on each table and the cakes were set out that afternoon before anyone got to the reception; they held out just fine.

    Thanks for the input! Since I want the dessert table to look really pretty and have decorations on it too, I think I'll just have the dessert bar set up during the last 15-20 mins. of the cocktail hour. That way, the desserts won't be sitting out too long, and my desserts will be set up nicely for everyone to see before hand lol. I know I'm overthinking this, but the presentation and small details of my wedding are important to me.
