Critique my menu please?

There will be roughly 60-80 guests, no children, no vegetarians.  Its sort of a like a buffet set up but with stations set around the outside of the room.  Nothing is finalized and won't be until next year but I wanted to see if we were headed in the right direction.  And we did just sign a venue contract that provides the catering.  Any thoughts on the following dinner?  I also need suggestions on the side dishes for each station.

Appetizers for cocktail hour:  To be determined but it'll be one station (probably cheese selection) and 3 passed appetizers.

Stir Fry Chicken station - with all the veggies.
Beef carving station - with a couple sauces
Rockfish station with fruit salsa sauce.

Mashed potato bar with regular mashed potatoes and garlic mashed potatoes.  Have all the sides of sour cream, bacon, chives, cheese. What else should go on there?

Salad bar with two different types of salad and like 2-3 dressings.

No wedding cake (FI doesn't like them and I don't have an opinion) but either apple pie/ice cream or the Carvel ice cream cakes.  We could do a dessert bar.

Open Alcohol Bar

Is this too much/too weird?

I don't think it's too much and it sounds good to me. Are you 100% sure that not a single guest or their date is vegetarian? If you go with the platter of cheese and a couple meat free passed hors d'oeuvres I think that you'll still be safe with what you have planned. And don't forget gravy on the mashed potato bar! Some people still go for the classic mashed potatoes and gravy.

That all sounds great. I think if you don't have a cake you should go with the dessert bar. Mini types of anything will be a hit and then people can have more than one thing. Youl could also do cupcakes or petit fours

On second thought, I'd consider doing just 1 type of salad and adding a different side item like a meat-free pasta (alfredo...eh? eh?) or soup instead of the second salad option.

    Sounds delicious!

I'd also have a dessert bar.

Thanks for the responses.  And yeah, I totally forgot the gravy for the mashed pototo bar.  Fail, lol.

I do like the idea of the soup.  I'll check into what kind they can do.  Thanks for the idea!

If your wedding is a simple, low-key, casual kind of affair I think it's fine.

    Sounds good to me!!!

I am having a mashed patatoe bar and I am adding grilled chicken and corn as a topping.
