Getting in Shape

Dinner!

Okay, so according to Sparkpeople, I eat wayyy too many carbs. So I need suggestions for a high protein, low carb dinner. The kicker is the only "cooking" untensil I have is a microwave...TIA!

  • You could get one of those cooked rotisserie chickens from the grocery store... They're warm the first day and reheat well. Day one you could have it with some steamed (in the microwave) veggies, and when it's cold tear it off the bone and add it to a salad? I wouldn't try to cook too much meat in the microwave, you might get sick... :) GL!

    The trainer I have met with a few times at the gym pointed out a very interesting thing to me when we were talking about my diet a while back. We (north americans) seem to have this idea that dinner has to have 3 things - meat, veggies, starch/carb. It doesnt though, you end up loading up on carbs and its totally unnecessary. Normally now I forgo the carbs with dinner and just eat meat and veggies for dinner. Do you have a foreman grill or anything like that? Ditto pp on buying the chicken pre cooked, I would also suggest the steaming bags of vegetables. If you could start grilling stuff too dthat would be ideal. Once you go without having carbs with dinner for a while you get used to it and just dont miss it, its also easier for your body to burn them off earlier in the day anyways!

  • To add to Annas chicken idea.. My parents used to get those chickens and they would use the leftover meat & make chicken sandwiches.. I dont like any kind of meat cold.. but I love the leftover chicken in sandwiches.. or you could put that chicken in wraps with some lettuce and cesar dressing..

    I know this might be gross but you can cook eggs in the microwave cant you? I dont, but I vaguely recall my husband balking at the way I cooked eggs when I first moved in because his mom used to exclusively cook them in the microwave.
  • The rotisserie chickens are awesome if you don't mind taking the skin and bones off (I make FI do it ha). We buy one every week and it's great for chicken salad using nonfat plain yogurt, dried cranberries, almonds, a little light mayo, onions, etc, whatever you like in chicken salad.
