Banana "ice cream" recipe tasting

Hey ladies just wanted to let you know that I tried Annakatebride’s banana “ice cream” recipe that she posted on Monday.  Our thoughts:   -definitely MUST use a food processor.  The banana gets pretty sticky and I got worried that I would kill the motor on our huge Cuisinart! -I ended up putting less than ¼ cup (sorry I didn’t measure) of skim milk in to help the mixture process a bit better. -FI put raspberries on top of his and thought it was boring. -I thought that it was fairly good- I tried it with peanut butter (ehhh), sugar free vanilla ice cream (yum- it broke up the banana taste), and blueberries (ehhh).   I’m not sure that I would make it again, but FI now wants to try to make banana sorbet to see if it might be a little more interesting.

  • I'm excited! I probably actually won't be able to try it this week like I thought I would b/c I'm traveling over the weekend, but I'm going to give it a go next week. I might try it with some chocolate chips or something and see how it goes...
  • I tried it too.  FI did not like it, he's picky.  I liked it, BUT I cannot eat ice cream (lactose sensitive) so it's not far off from my soy ice cream.  I had it with my mini hostess chocolate cupcakes with a little FF cool whip.  The cool whip helped a lot so next time (I will make again) I'll add that right when it comes out of the freezer, and just fold it in.  Only thing I wasn't sure of, did you peel before or after freezing?  I peeled after and it was messy, had to cut off the peel and probably lost some banana.Also, how ripe should the bananas be?  If too ripe, might make it too sweet and banana-y ;).
  • When I freeze bananas I peel them and chop them first and put them in ziploc baggies(I add them to my smoothies) so it's easier for the blender or food processor to chop them up! I also only freeze them when they are ripe (eating ripe, not banana bread ripe). HTH!

  • i had a BIG blonde moment. i put the bananas in the freezer with the peels on. they feel like petrified bananas now...not peelable at all.:-P

  • I tried it and I think my bananas were too ripe. It was almost sickly sweet. I ended up adding a tiny bit of skim milk and some cream cheese which made it like a whipped dessert instead of ice cream. It was delicious then with a few mini chocolate chips on top of it. Definitely need a food processor. I used one banana in my mini processor and it worked great. Processors whip upwards so when it comes down it brings air in...blenders pull the food down and it won't get as fluffy.
