Zucchini Bread Recipe

What works for you?  I usually go on allrecipes.com and find something then adjust but figured I'd ask here first.

  • This is totally off topic, but katy you look fan-tastic in your siggy picture! I pretty much make any bread recipe healthy by substituting sf applesauce or plain greek yogurt for the oil, using whole wheat flour, and egg substitute instead of eggs. It's an easy way to cut down on TONS of calories, make it a little healthier with whole grains, and it works for pretty much any recipe.
  • I made some last night!!!!!!!  Any recipe will work, but I super healthified mine by using egg beaters instead of eggs, whole wheat flour, splenda instead of sugar, and applesauce instead of oil.  I also added some raisins and apple chunks and it is SOOO yummy!!  If you use a lot of substitutes like I did you should use extra baking powder because the substitues (especially the applesauce) are denser and prevent it from rising.  I just googled zucchini bread recipe and used the first one that came up.  Happy Baking!
  • Aww, thanks Musgral, good to see you!So I went ahead and adjusted one found on Allrecipes.com.Here it is: 2 1/4 cup(s) whole wheat flour3/4 cup(s) all-purpose flour 1 tsp table salt1 tsp baking soda1 tsp baking powder3 tsp ground cinnamon3 tsp vanilla extract3 item(s) egg white(s)1/4 cup(s) canola oil3/4 cup(s) Unsweetened Apple Sauce3/4 cup(s) sugar3/4 cup(s) unpacked brown sugar2 1/2 cup(s) zucchiniPreheat oven to 325.  Grease and flour two loaf pans.  Mix dry ingredients and set aside (recipe said sift, I don't have a sifter!).  Blend the eggs, sugar, vanilla, oil, applesauce.  Mix in dry ingredients.  Stir in grated zucchini with water (don't squeeze or strain).  Bake at 325 for about 50 minutes.  My original recipe said 40-60 min it actually took 70 minutes but my oven might be on the fritz :).  2 points each when cut into 24 servings!  YUM.
