I just ate a super good lunch and wanted to share. It's from Kalyn's Kitchen, a blog focusing on South Beach recipes.
http://tinyurl.com/3jwj2rsI used mango instead of persimmon because I couldn't find persimmons at my store. I used one avocado and one mango and then served it over a few handfuls of mixed greens. Super good, especially if you like avocado.
