Low carb prepare ahead-of-time lunch ideas?

A PP gave me an idea to post this question: what are some healthy, low carb things that you make for work lunches? I am in a rut with basic salads every day. I hate thinking and preparing too much in the evenings for what I will eat for lunch the next day. Any good ideas? I have thought about making some soups and freezing them in containers.
What are your favorite bring-to-work lunches?

  • Have you checked out the south beach cook book or any of those books? I love all the recipes!! The cilantro mayo drives me crazy, so I love doing lettuce wraps and dipping. I have a million ideas, hope this helped, if not hit me back and Ill give you more.
  • -Chicken fajitas with no tortillas. I use chicken, peppers, onions, and some mushrooms and add some seasoning.

    -turkey chilli

    -white chicken chilli

    -pulled pork with no bun

    -chicken shrimp or steak stir fry with no rice

    I am not sure if you can find these where you are from but I eat La Tortilla Factory whole grain wraps.  They are 80 Kcal 3 g fat , 3 carbs, and pack 14 g of fiber.  I use them for sandwiches everyday for lunch.  Little turkey and a lot of veggies.  They also make a small taco size version that I use for tacos and even put a little PB on it before a run!  They are super filling because of all of the fiber but the fiber is what helps make the net carb count so low.

  • I make extra of whatever I cook for dinner, and then I have a smaller portion of leftovers for lunch. It definitely takes a lot of the thought out of figuring out what to have for lunch.

     So . . . for example, if I cook something for dinner that is 6 servings total, the two of us each eat 1 1/2 servings for dinner, and then there are 3 lunch sized servings left. 
  • I just prepped some chicken salad sandwich mix and wrapped it in lettuce. :)

    Its really simple: 1 boiled chicken breast cut up, some choppen celery and onion, a little salt/ pepper, and some light mayo. Mix it together and add it to 2-3 large pieces of lettuce! YUM!

    yeah, I have refernced the SB diet cookboooks...I just could't really find much that might be easy to prepare for the next day that was for Phase 1. Thanks!! Let me know any other good ideas you have.

    Have you tried mixing greek yogurt with cilantro. Heaven!
