Hey ladies~ I just tried this salad from a local deli and it was delish, so I tried making it at home and it turned out great too! I figured I'd pass it on since it's perfect for summer in lieu of potato or pasta salad and it's light & refreshing!
I just added:
2 yellow zucchini squash, sliced
5 roma tomatoes, sliced
1 can of palm hearts (drained & rinsed well)
LOTS of fresh basil leaves (this is what really makes the salad) just roll up and cut in to thin strips
EVOO - drizzled & tossed in to salad
Juice from 1/2 a lemon
Pepper
Then just mix it all together. It is best if you let it sit in the fridge for at least an hour, so all the flavors can come together. But anywho, I hope you like!
