I had this for dinner last night and had to share... it was amazing and so easy! Especially with tomatoes from my own garden!

Grilled Salmon with tomato and basil: mince 4 cloves of garlic, add 1/4 tsp salt and mash with a spoon to form a paste. Stir in 1 tbsp olive oil. Place salmon filets on two sheets of heavy-duty aluminum foil (I have these these metal chicken-wire looking things for the grill, so I used that with a regular sheet of foil) and spread the garlic/oil mixture on the fish. Sprinkle basil on top of the filets, then cover with sliced tomatoes and season with pepper. Put the whole thing on the grill, cook at medium for about 10 minutes.

    That sound wonderful.
    I have a very simple chicken recipe that my FI can't get enough of.

    Marinade: Walden Farms Zetsty Italian (calorie free, sugar free, pretty much EVERYTHING free Laughing) dressing. Use as much as you feel you need. 1 TBL of Loretta Roast Chicken Seasoning (it has low sodium). 1 tsp minced garlic. If you like spicy you can add a small amount of sriracha (it's a pure chili paste) for a kick.

    Marinade boneless skinless chicken breast for at least 1 hour. 

    Heat a pan to med heat with 1 TBL of extra virgin olive oil. Cook chicken for at least 6 minutes on each side or until cooked through. I like to place a lid over the pan, it keeps the chicken VERY moist. I also pour the extra marinade on the chicken at the tail end of the cooking. It makes a nice sauce.
