Getting in Shape

best dinner ever! Less than 500 calories

Baked Tilapia:
3/4 cup breadcrumbs
1/3 cup grated paremsean cheese
1 tsp dried oregano
1/2 tsp garlic salt
1/2 tsp onion salt
1 egg white
4 tilapia filets

-mix all dry ingredients together, dredge the fish in the egg whites then in the breadcrumb mixture bake for 8-10 min at 425F

Almond Broccoli (this was actually supposed to be green beans but I didn't have any)
-1 head broccoli cut into bite sized pieces
-1 medium red pepper sliced thin
-6-10 mushrooms sliced (I used 1/2 a can of mushrooms)
-1 small red onion
-1 tbsp olive oil
-1/4 cup sliced toasted almonds

-Cook broccoli in boiling water until almost completely cooked, while that's cooking sauté mushrooms, peppers, onion, add cooked broccoli and finish cooking allowing all the flavors to mingle

  • Sounds delicious!! I just made some baked salmon that sounds similar.

    I've always steam my veggies instead of boiling- I find they taste better that way, and I've heard they retain more nutrients. Just a thought to make the meal even better! (though I'm no food expert)
  • ....how much sodium is in all that? i'd be worried that its a little high.

    does have some good iron and protein though. well done. sounds tasty =)

    I'm sure you could adjust the salt as needed and it wouldn't change the recipe much, if you are looking to decrease your sodium intake.
