A friend at work had a cauliflower salad today that was amazing, and made me think about using more cauliflower since I currently don't eat it at all. I started thinking about what I had at home and created the most delicious wrap I've ever had. I normally don't share things like this but I'm very excited since things I make up are inevitably mediocre

I steamed a frozen salmon fillet and some finely chopped cauliflower and onion. Then I mixed that all together with some green onions and honey dijon mustard.. Fill a whole wheat wrap and throw it on the panini grill. I couldn't believe how good and how filling it was! And all for about 330 calories! Hooray! I think next time I may add some fresh spinach..
Does anyone else get excited when you find something that you love AND it's good for you? This doesn't happen to me often..
