Sure! I used panko bread crumbs and threw a little buffalo sauce into the egg whites. I think they'd also be great without the buffalo sauce and some herbs or parmesan. I baked them on a cooling rack on top of a baking sheet. I saw it on Rachael Ray one day, it allows the heat to get on the bottom of the fingers as well and helps the crispiness factor.
