Eating too much versus not eating enough

I'm having trouble understanding and achieving a good balance between a low calorie intake that is appropriate for a healthy body and supplying my body with enough food when I'm working out. I know I need the protein for my muscles to rebuild. But when I look at livestrong.com or other similar calorie counters, I am always really hungry at the end of the day. I wonder if this is due to me not eating enough of my calories earlier in the day (for example I need to have my calories spread evenly through the day), or if I just need to eat a little more, like that glass of skim milk before bed. There's always the possibility that I'm eating because I'm bored - it's always post-dinner that I'm hungry and also the most likely time for me to eat junk food. How do I know if I'm eating enough?
