Should we have a contract with the florist?

Yes, you should.  It should have when your final payments/consultations are due, charges (other than flowers- delivery, setup, etc) and any other policy/agreement you have made with the florist.

You should have a contract with anyone you are giving money to.

You should definitely have a contract with your florist, as well as all your other vendors.

100% yes.  It should give you what the cost will be, how much you owe and dates when it is due!  My florist was great, she basically went line for like as to what each boquet, bout, corsage and centerpeice included, and the price for each item, when the payment was due, and when to return rental supplies used in the pieces.  That way, you can also hold them accountable for what they priced you for, and get what they priced you for!
