Favorite Homemade Dinner

Alright so there's all of probably 40 people here today out of our 270+ employees.  And of course, I'm one of those 40! I 'm bored, trying to come up with my grocery list.  I always find that I fall back to the same foods, so give me some ideas of your favorite homemade foods!

Mine is Grilled Pizza!

    Chicken Fried Steak, mashed potatoes and cream gravy... all from scratch.  Yummy!! 

    Except, my kitchen is a disaster area when I'm done!

    Grilled Pizza is something I have been reading about lately but we don't have a grill to try one yet.

    Pork tenderloin, Lentil sloppy joes...

    We cook almost every night but my mind is going blank :(

    Mmm, that does sound good!  I've only made CFS a couple times, but I honestly think I have it perfected!  I'm from ND and I never had CFS until I moved, but its definitely one of my favs!

    I love to make beer can chicken, with asparagus and mashed potatoes.  Yum!

    Spaghetti with slices of italian turkey sausage, fresh basil, and fresh Parmesan with some sort of red sauce. Sometimes a homemade tomato sauce, or a bottled arrabiata or sauteed garlic/onion sauce. Simple and yummy.

    If my mom's cooking though, it's Filipino Chicken Adobo (chicken cooked with lots of garlic, soy sauce and vinegar) with steamed jasmine rice and Pancit (glass noodles cooked with chicken broth and soy sauce with some veggies and chicken/pork/shrimp thrown in).

    cheryl- my best childhood friend her mom is filipino and some of my favorite memories at their house was when she made pancit!  Words cannot descibe.

    I limit meat for myself so I usually cook one meal for me and one meal for FI.  His fave go to meal is speghetti with chicken in it instead of hamburger.  Before I limited meat I used to love chicken tacos (easy and delicious it was also the hit pot-luck meal).  Now my fave is veggie soup thats been in a crock pot all day!

    Pot Roast, little round potatoes, baby carrots, and gravy! (I need to go to my dad's and let him cook for me!!!)

    Favorite homemade dinners that I make: (the stuff so good that I will eat to the point of almost being sick )

    Fried chicken plus mashed potatoes with the skins left on. (I can never get gravy right.)
    Chicken Flautas (taquitos for some people) plus refried beans with cheese
    Caldo de Res
    oven roasted brisket

    Favorite homemade dinners that my mom makes:
    anything that involves her homemade flour tortillas
    anything that involves her homemade chorizo

    ezzyv- Do you mind sharing your recipe for Caldo de Res? I had that at a party once and it was sooo good. I tried to make it once and it just wasn't the same.

    Ah recipes....I will tell you what I do but I can't give exacts because I eyeball everything. (It drives FI nuts when I ask him to do something and he says how much or how long and I say until it looks right.)

    Cut up the meat that you will be using for your soup into 2 inch to 3 inch cubes.(I like big cubes so that i can easily find them and distribute at the end.) If you have any soup bones from the neck that you can add that add that as well but it is not necessary.

    Place your meat in the largest pot that you have. Add half a large onion. Don't cut it into slices or anything . just let the whole half hang out. Also add 4 -5 cloves of garlic. Season  heavily with salt and pepper. Cover all of that with cold water. Simmer for 45 minutes to 1 and a half hours. (depends on how much meat your have.)

    Check the doneness of the meat. Once it is almost completely cooked, fish out the garlic and onion and toss them. Taste the broth for seasoning and salt to taste.  At this point you can add the veggies. I add potatoes (cut in half or quarters depending on size), carots( 1 inch pieces), squash/zucchini (1 inch pieces), cabbage (quartered or eighthed depending on size) or any other vegetables you like (Pretty sure my mom added corn on the cob once. I think any root veggie is game tbh.) Once your veggies are added add a bundle of cilantro and cover.(sorry cilantro haters but I think that it adds a lot of flavor) Cook for about 30-45 minutes...basically until the largest and hardest veggies are tender. (carrot and ptoatoes) Once finished you can fish out the cilantro and toss.

    Our favorite is probably my spicy meatloaf stack. It's jalapeno cornbread with Tex-Mex meatloaf on top, with a scoop of mashed potatoes on top of that, covered with onion strings. FI eats it with BBQ sauce. Soo good.

    Tex-Mex meatloaf. I just add a can of Rotel to my mom's meatloaf recipe and it makes it spicy.
    Jalapeno corn bread. Just the Jiffy mix with a bunch of jalapeno slices chopped up in it as well as some juice from the jar.
    And mashed potatoes from the box. :)

    I like to cook, but I like to make it easy on myself too.
