Recipe & Cooking Help (calling all culinary mavens!!!)

Hi there ladies; my FI has been doing a great job recently with a couple things. He was given some very flattering compliments from our CEO about a presentation on brain injury related behaviors and today he was offerred a giant raise and promotion since his current contract is almost up. He'll be making an additional $15K per year!
**gloating over**

To celebrate, I would like to make him a homemade lasagna; I know I will never be able to duplicate his mother's recipe but I would like to make him a nice dinner...I think he's earned it! So if any if you culinary mavens out there want to share something delicious (but preferably not intimidating) I am wide open!

Thanks for all your help!!

  • It's not lasagna and it'll only work if you have time to go out and buy the dough like now to let it defrost, but this is delicious. I made it last night as just a calzone, without braiding the bread, and it was easier and just as tasty. Oh, and I rub olive oil on top instead of eggs: http://rhodesbread.com/blog/blog/braidedspaghettibread

  • I use this recipe when I make my fiance and I lasagna, but I use ground beef instead of turkey sausage. It's delicious!

    My lasagna recipe:

    1 package of lasagna noodles
1-2 jars of your favorite tomato sauce
    1 tub ricotta cheese
    1.5 bags mozzarella cheese
1 lb ground beef or turkey
2 cups of a white bechamel sauce (standard butter-flour-milk sauce)

Spread tomato sauce in the bottom of your lasagna pan - any pan you like, I recommend a glass 8x13

Layer lasagna noodles overlapping slightly, I usually get 4 across lengthwise.

For layer 1: Spread some of the white sauce across the noodles, dollop ricotta cheese throughout the layer, and sprinkle with mozzarella.

    Layer lasagna noodles again

For layer 2: Spread tomato sauce and a generous helping of ground beef across the layer.  Sprinkle with mozzarella.

Repeat alternating layers until you either run out of lasagna noodles OR fill your pan.  Finish off your top layer with tomato sauce and mozzarella.

This makes a REALLY gooey lasagna, which is how I like them!  You can also sprinkle italian seasoning over each white layer for more flavor, but I don't always have it on hand.

My other favorite pasta recipe, but probably one of the LEAST waist-friendly recipes ever is fettuccine alfredo: http://thepioneerwoman.com/cooking/2009/07/fettuccine-alfredo/

  • from experience... and please don't take offense, but -

if you have never made lasagne before, that might not be the best choice for a special dinner. I am only saying this because different pasta brands and ovens tend to behave differently. Lasagna is one of those dishes that takes some practice and perfection. even though I am a pretty experienced cook, I would stay away from that one if I wanted to make sure that the dinner is really well made and presentable.
Maybe you ought to try another Italian dish? I personally enjoy trying recipes from Allrecipes.com (check the reviews and suggestions that others have made on the bottom) or from food network website. Good luck!
