my MIL always makes her cakes a day or two in advance, and then just keeps them in the fridge. wait until the icing sets, then cover the cake. Keep some extra icing in case it gets messed up and you want to touch up. keep the cake away from strong-smelling foods, if possible. if you're using buttercream icing, it will get hard, so just set the cake out for a 1/2 hour or so before serving to soften it up.

    Thank you.  We have a second frig with nothing but beer so it should be perfect.  Excellent tip on keeping the icing.
