We bought some green garlic at the farmer's market on Saturday. I really love green garlic and had in mind a previous pasta dish to make with it.However, I had been perusing an older cookbook of mine, b/c I used a recipe in it to make pumpkin soup in the pumpkin on Saturday (it was alright). In it, I found a green garlic and leek risotto. I had some leftover leeks from the garden, so I made this instead with my green garlic.OH. MY. GOD. It was so good. It was worth the 3 pans it took to make it all. I had 2 servings, it was so good and if I could've convinced my stomach it could handle more, I would've had a 3rd.Also, I used plain yogurt instead of cream in the risotto. It was surprisingly good, reduced the calories a lot, and gave a nice tang to it as well.
