Wedding Woes

zucchini bread

This recipe will be a staple in our house. It yeilded two loaves and one went into the freezer. Simple and delicious (according to H and his cw). Recommend. It did, however, make us lament the loss of our garden to the hail storm. I would love to make this with our own zucchini.

zucchini bread

3 eggs
2 cups sugar
1 tsp vanilla
2 cups grated zucchini
3 cups sifted flour
1 tsp cinnamon
1 tsp salt
1 tsp soda
1/4 baking powder
1 cup chopped nuts & 1 cup raisins (both optional)

beat eggs until foamy, add oil, sugar, vanilla, spices, zucchini, flour and mix well.
 
turn batter into greased loaf pan or two smaller pans. bake 350 for 1 hour. bake longer if neccesary. remove from pan and cool on rack. can be frozen - wrap in plastic wrap.

I can tell you my mom used to freeze this all the time. It sounds like it might be a way for you to use some of this up and not have to eat it right away
