    slice and salt.  flour, egg, bread crumbs, into the frying pan.  add cheese and marinara.  shovel.

    I cube it, potatoes, peppers, carrots, squash, whatever, toss it in olive oil + herbs/salt/pepper and oven roast til tender.

    then make one without roasted red peppers, give it to your husband, take it back, and eat them both.

    Yes hmo, I do believe that is what would happen.  His face would get all "I won't eat that" and I'll pretend I care...snatch it back and gobble it up.

    Slice it in round, flat pieces, salt and put in a collander in your sink. Let sit, the salt will sweat out liquid that takes the excess moisture and the bitterness out of it.  Google eggplant salt drain and you'll find lots of instructions for doing this. Recipes I've seen call for letting it drain from 20 minutes to 2 hours.
