Food Porn - we went to the farm restaurant again

We went to the restaurant last night that is on a working farm. It's a Michelein (I know I spelled that wrong) rated restaurant. Everything is either grown/slaughtered on this arm or comes from local farms. All you get is a list of ingredients. They ask for allergies or aversions. You have a choice of 5, 8 or 12 courses. We did 8.

This was our meal. We also did wine pairings but I have no idea what we drank other than it was delicious and paired perfectly. (In the sort of order but I can't remember everything's order. It was a lot of booze)

 ~bite sized beet burger (bun was a tiny corn roll); farm fresh veggies (purple cauliflower, white cauliflower, carrot, and radish); salsify wrapped in pancetta and fried; oat cracker, dehydrated kale, red potato chip with sage leave woven in before it was fried; radish with salted butter; V9 juice (no idea what veggies were in it but it was delicious.

~ beet salad with farm fresh yogurt, pine nut butter

~ celery fusili with barely poached egg yolk, parmesan cheese, berkshire hog bacon (mix it up and make your own carbonara)

~ home made brioche with kale marmelade and super fresh ricotta

~Striped bass (grilled) over manhattan style seafood chowder

~ squash pasta with uni (the uni was actually a foam)

~ onion potato bread, whipped lard, fresh butter, tomato salt and beet salt

~ pork loin, jowl, leg, blood sausage with roasted apple and an apple-y sauce

~ Cheese plate (Strong manchego type of cheese with quine and a blue cheddar with a poached crab apple)

~ PB ice cream with chocolate crumb, home made jelly and candied peanuts

~ Maple icecream with poached mutsu apples, graham cracker and milk jam (dulce de leche)
