breakfast recipe help/suggestions

I wish Candi was still around....she made these egg things in muffin tins that I would like to make for company breakfast.

Does anyone have any recommendations/suggestions for an egg dish that I can prep the night before and cook in under an hour - to bring to work?

It is very ethnically diverse here, so vegetarian options are preferred - or something where I can make a meat version and veggie version.

    I do mini quiches- squish some pie dough in the bottom of a muffin tin, bake, fill with whatever and eggs, bake until done.  If you want more specific I can get you more.

    I also have an egg casserole recipe and I pinned a recipe for make at home egg mcmuffins that I can't wait to try.
  • The egg caserole recipe would be appreciated, especially if you have tried it and liked it. I'm afraid I'm going to bring something and either everyone will hate it, or die. Which might mean breakfast tacos from a FF place.

  • This sounds disgusting, but I swear it is really good.  I have made it soooo many times and I always get asked for the recipe.    It is great for vegetarians who eat eggs. And it's a really nice alternative to the standard sausage/egg/cheese casseroles.

    Lima Bean - Egg Casserole


    Ingredients

    * 2 T olive oil

    * 1 onion, chopped

    * 1 teaspoon minced garlic

    * 1 large green bell pepper, finely chopped

    * 2 medium tomatoes, diced

    * salt and pepper to taste

    * ground cumin to taste

    * 2 (15 ounce) can lima beans, drained

    * 1/2 cup chopped fresh parsley

    * 4 eggs

    * 1 tablespoon butter, cut into pieces

    Directions

    1. Heat oil in a large skillet over medium heat. Stir in onion, and cook 5 minutes, until tender. Stir in garlic, green bell pepper, and tomatoes. Season with salt, pepper, and cumin. Reduce heat, and simmer 15 to 20 minutes. 

    2. Preheat oven to 400 degrees F

    3. Mix beans into the onion mixture. Stirring occasionally, cook 10 minutes. Toss in parsley, and transfer to a medium baking dish.

    4. Beat eggs in a small bowl then pour over top of bean mixture, dot with butter, and season with salt and pepper. 

    5. Bake for 15 minutes in the preheated oven.

  • I have an awesome recipe at home for a very yummy Cheesy Grits Casserole.  It's so bad for you with all the cheese, butter and sausage, but if you take out the sausage I'm sure that would help.
    Let me know if you want it and I'll come back tonight and post it.
