Wedding Woes

I need halp.

My parents are coming to dinner on Sunday and I'm stumped on what to make.  I keep coming back to tacos or spaghetti bceause they're easy for me to make, but I'm just not feeling it.

I need something on the easier side of things and not time-consuming as I have to work Sunday.  And no fish because my mom isn't a fan. 


I feel like I've been in a cooking rut and need some inspiration.

  • I'm with TG on stir fry.  You can jazz it up with different rice options.  There is also a really good won ton stiry fry salad I have somewhere...hmmm.  It's an old Marshall Field's recipe.

  • My friend makes stir-fry. A good roast chicken can be impressive, too.

  • Stir fry is always good, as well as the roast chicken. Without fish as an option, I really don't have any recipes that I've personally made.

  • For my stir fry I cut up chicken breast and pan cook it. Throw in a couple of bags of defrosted frozen veggies.

    Sauce: Soy, brown sugar, honey, powdered mustard, ginger powder and garlic poweder. For added spice a little red pepper flake.

  • I'd vote for something in the crock pot so it can cook all day while you work. 
    Pulled pork
    beef roast
    chicken

    You could go with your taco idea and make the meat in the crock.

  • Roast! Honestly, a nice roast chicken, pork loin, or pot roast is easy, homey, and almost always appreciated in my experience. 

    Although my mother raved about a corn chowder I made when they visited in October once. I just made it because it was cheap.

  • What about home made pizza? It's easy to buy dough or make dough, then just buy toppings. Everyone makes their own pizza.
  • Pizza takes for-ever though. At least it does for us - you have to make each pizza, then wait around for them to cook one by one - No, thanks.

  • my go-to meals for company are roast chicken and lasagna.

    i have a great brining recipe for the chicken, if you're interested. you can cut up veggies are roast in the bottom of the pan.

    pulled pork is a great crock pot recipe  - you could make sandwiches and have sweet potato fries.
  • A pre-marinated pork tenderloin is my go-to easy company dinner.  Already seasoned, serves 4, only takes about a half hour.  Some rice or taters and steamed veggies, and done.   
  • I do a cherried pork roast in the crock pot that is wonderful- a bag of dried cherries, sliced onion, some thyme, salt and pepper, then a cup of either water or apple juice/cider.  Serve over noodles.
  • If you want something pasta-y, but different you could do lasagna or lasagna roll ups.  For the roll ups I use ground turkey and put in onions and some blanched broccoli.  Add ricotta and cheese and spices like you would a lasagna.  Then roll up in a noodle.  Easy to make ahead and really good.
