Dramatic/Romantic/Vintage/Vinyard...???

I'm trying to find a way to convey my wedding style to my vendors and needless to say, I'm strugglin'!!
I'm using the same vendor for my reception linens and centerpieces - getting a great deal and the coordinator is SUPER amazing, I'm just afraid she's missing what I'm going for. 
My colors are dark red and dark purple (eggplant-ish) with touches of champagne here and there.  My initial centerpiece idea was to mix wine corks with dark red crystals - have a florist stick some flowers in those little water tube things - put the cork/crystal mixture in a glase vase and stick the flowers in the corks.  However, now I'm think I want to add some drama.  I'm taking advantage of the white table cloths the venue is providing and will be placing purple organza overlays on top of them.  However, I'm worried the purple won't be dark enough on top of the white.  Chair sashes will be red satin (which I'm also afraid is more of a bright red as opposed to the daaaaaark red I'm really looking for).  The linen co swears that it's going to encompass the feel I want, but idk.  I'm afraid of being a b*tchy bride, so I don't really want to push the issue.
I think if I could find some photographic evidence of what I'm looking for, that might help.  I've included one picture I found thats really close to the atmosphere I want to convey.  Of course, this set up is WAYYY outside my budget, and missing the purple element,

but you get the idea.
