greek traditions?

My fiance has graciously agreed to marry in my church (roman catholic). He is greek orthodox, and I am wondering what aspects of his culture I can incorporate into the reception. I'm not asking him directly because I want these elements to be a surprise to show him my appreciation on the day of the wedding. I have already hired greek dancers to perform for a given amount of time during the reception, but I am hoping people can point me in the direction of other subtle, smaller ideas that may be the perfect touch to truly make this "our" wedding and not just "my" wedding.

Will they allow you to do the crowning ceremony, or include a Greek Orthodox prayer or hymn, in the wedding ceremony? Talk to your priest and see.

Maybe serve some well-known Greek foods during the cocktail hour or as an entree choice.

Google Greek wedding traditions.  There are quite a few sites.
The ceremony:
The groom waits on the church steps for the bride, presents her with a bouquet, and they go into the church together, mingling with the guests.  No traditional "bride" or "groom" sides in the church.
They don't exchange traditional vows, just show up.

The priest may walk them around the altar, or have them exchange their crowns back and forth
