We pretty much have our dinner menu figured out, but we're struggling to narrow down what we'll have for the cocktail hour. We have around 350 guests and I will being creating the menu and prepping all the food (I'm a chef
then a professional staff will be finishing everything on the day of the wedding.
So here is what I have so far:

Apricots with Mascarpone and Pistachios
Watermelon Cubes with Aged Balsamic
Vegetable Spring Rolls with Chili Mayonnaise
Cheese stuffed Dates with Prosciutto
Baked Macaroni and Cheese Cupcakes
I KNOW THIS LIST IS RIDICULOUS RIGHT NOW! I'm trying to get it down to eight and still have lots of variety. Any suggestions welcome. Thanks!
