Another food post: Crockpot recipes??

So, I'd like to play "wifey" this weekend and have dinner ready for FI when he gets home on Friday (he's currently working out of town during the week).  Only problem is that he gets home before me!  I figure a crockpot recipe would be the way to go.Anybody have a fave they'd like to share?
