We are just using itunes and having my FBIL control it during the ceremony.  Then we are hooking it up to the house speakers for reception.  I think it just stays in order if you don't hit shuffle.

Ms_Teach did this for her ceremony....she is a good person to ask :)

For cocktail hour, we picked upbeat/fun songs and gave priority to beach songs.

For the reception, we picked slower tempo love songs to play softly in the background during dinner.  For the party part of our reception, we picked mostly upbeat dance songs, but threw in some slower ones every 4-5 songs or so.

I didn't use the shuffle feature.

I didn't really answer the question you asked so I'll be more detailed
We actually started writing songs down as we thought of them for the past few months and then we made a spreadsheet that lists the song and the artist.
We made a list for ceremony, cocktail hour, dinner, and reception.
Just this weekend we actually played each song (or at least the beginning) to make sure we liked it where we have it playing.
ms_teach put it perfectly for the type of music we are also playing at each part of the day.
