Cake filling...

Good morning girls!So I have finally booked our cake tasting, which will be next monday. The thing is that I don't know much about cakes and have no idea what fillings to choose from. All I know is that I want red velvet...I heard rasberry filling goes well with it...but I would like to have other options as well. Any suggestions? TIA Also did you get different ones for each layer?

    Depending on the size of the cake...you will usually be able to choose at least two flavors and or fillings.  Typically red velvet is made with a cream cheese filling, but I think rasberry, or any filling that goes well with white and yellow cake would be tasty :) I will tell you FI and I were generally dissapointed with the red-velvets we tasted when we were doing our cake tasting, but it is one of my favs :) Good luck! I was pretty sick of cake by the time we were done...although we crammed a lot of places in to a day because we are planning remote.

    The cake place should have filling suggestions for you. We chose 2 different flavors of cake and 2 different fillings. Depending on how the baker does it you may get a piece of "taster cake" which means a cake all put together with 2 layers, a filling, and covered in a simple buttercream. Another way it is done is having different cake flavors alone and then the fillings in separate cups so you can taste the cake with different fillings. 2 of the tastings we did were like the first example and 1 like the second. They were both great. We went with a baker that did the tasting like the first example with a taster cake. You will know what to do when you taste. Good luck and have fun with it!!

    When I booked my tastings (we did 3), each bakery gave me 3-4 combination choices. I had 2 in mind that I wanted to try at each place to do an even comparison- chocolate cake with raspberry filling and white cake with strawberry filling, but as for the other choices, I asked the bakeries what was popular. So for one we tried (in addition to the two I requested) marble cake with espresso mouse and chocolate cake with chocolate chip bavarian cream. For the second, they recommended marble cake with chocolate ganache. And the third, we had chocolate cake with mocha mousse and chocolate cake with espresso mousse.So they were all fairly similar flavors- but this way we really got to compare quality and taste. We went with the last one we tried, and we will 3 tiers with a different flavor on each tier. Bottom will be chocolate with raspberry and chocolate ganache, middle will be white cake with cream cheese and strawberries, and top will be chocolate with mocha mousse.Hope that helps!

    so i will give you some info about tasting cakes i use to work in a bakery and they specialized in wedding cakes, normally a place have a list of cakes and fillings that you can choose from, FI and i went to Helena wirth for our cake tasting and they actually had i think like 7 different cakes for us to taste, and if you want more they can make more, the cake can be different on each tier, we did the bottom funfettie with a vanilla mousse the middle is going to be chocolate cake with chocolate ganash and chocolate mousse,( FI picked that one) and the top tier is pink champagne cake and vanilla mousse with rasberry jam. the one thing i am picky about is frosting i dont like the really sweet stuff and i dont like fondant and that is why we went with helena wirth  her frosting was really good. You basically have all the power when it comes to choosing your cake, have fun with it, and bring in pictures if you have any sometimes you dont find what you are looking for in there picture books.

    Our bakery had red velvet, but we liked the other selections way better... We went with: lemon cake with and lemon chifon and raspberry puree filling, and buttercream frosting The other layer was marble cake with strawberry puree and vanilla bavarian cream, with buttercream frosting or something like that... my brain is a little fried at the moment. Try tons of combinations, you never know what will taste great!

    my advice would be to taste all that you can because my favorite was one i NEVER would have asked for (vanilla sponge cake w/ a bavarian passion fruit cream filling.) red velvet is also my favorite, and it was my least favorite out of the ones we tasted. it just doesn't work well as a wedding cake imo.

    I love Red Velvet too.  With creamcheese icing, but I think most bakeries only do buttercream.  I'm hoping to have the creamcheese filling. At least for my top tier.

    Great advice ladies... I agree with the red velvet thing. Every bakery seems to mess it up. I had a red velvet cupcake at a bithday party a few weeks ago and it was so oily that it grossed me out to the point of almost... well...tossing my cookies, if you know what I mean. I tasted a wedding cake on Saturday that was Spice cake with bavarian. wow, amazing! Good luck!!!

    We also went with Helena Wirth. They had a really huge selection of flavors and I wanted something different on each tier also.Like Jenna said they gave us around 7-9 different choices to taste from. And then they are nice enough to let us take some home for my dad too :)Our first tier is a lemon chiffon with a ginger. Our next tier is the chocolate with chocolate ganache. Next tier is the pink champagne with raspberry filling and vanilla butter cream, and the final layer is a marble tiramisu.I wanted something a little different than frosting all over so I opted for ladyfingers surrounding the entire cake and fruit on top somewhat like this:http://tinyurl.com/lhzdm4We're having ours wrapped in a dark red paisley patterned ribbon with gold trim and the flowers on top are going to be different--prolly orchids, not sure yet.
