Plz to share cilantro recipe?

 I bought a big bunch at the farmer's market today, and I'm trying to figure out what to do with it. I know I want to try cilantro lime rice, but the only other thing I've really made with it is pico, and I only like to make that if I'm bringing it to a party or some type of potluck.

Does anyone have any recipes with cilantro that they especially like? Or a specific cilantro-lime rice recipe that they've used before? I'm pretty helpless in the kitchen, so the simpler, the better for me.

    I always put it in my guacamole. Yummy.

    ETA- Or use it to top tacos, burritos, etc.

    Guacamole or salsa. I've also made pesto with it. I put in the food processor with garlic, toasted pumpkin seeds (sometimes labeled pepitas), garlic, red pepper, and olive oil. I also love to make chimichurri.

  • Mmmm, pesto sounds good. It's usually a bit too garlic-y for H, but maybe I could just cut back on the garlic?

    I think a good onion-less guac is in order. That seems easier to make a small batch of than pico.

    Does anyone know how long cilantro will keep if already chopped? I haven't  bothered to Google that yet; it's in the fridge in a glass of water still on the stems for now.

    I do cilantro-lime marinades for chicken and pork.  It's yummy.  I need more ideas myself, we planted some cilantro in our herb garden and it grew out of control!  My DH can get very experimental when he cooks, so cilantro tends to end up in everything, which can be bad at times.  (Note, cilantro added to a tuna casserole is not good).

    I think cilantro would make me like tuna casserole! I could eat cilantro on my breakfast cereal. Not really, but I effing love cilantro.

    I wouldn't chop it until I was ready to use it. I've had it last for weeks on the stem though. Especially if it is from the farmer's market, stuff I get there almost always lasts longer than stuff from the grocery store.

    I love this one! It's not exactly summer friendly since it's a "soup/chili" but it's sooooo yummy.
  • I think you can freeze cilantro in ice cube trays, then just defrost what you want to use. You can do that with basil, anyway. Obviously, I'd only do that if you're putting it in something you're going to cook because it won't be "fresh" anymore.
