Easy and Delicious...

not so much nutritious.  My favorite easy dinner to make lately has been bbq chicken quesadillas.  Shredded chicken mixed with my favorite bbq sauce, shredded pepperjack cheese in a flour tortilla.  I serve it with ranch dressing.  Anyone else have any easy recipes to share?  I'm in a dinner rut.

  • My easy recipe last night was get in the car, drive to Chipotle, buy a quesadilla, go home and enjoy.

  • Diet coke chicken. Boneless skinless chix breast BBQ sauce 1 can coke/ diet coke. just slather on the bbq sauce, then towards the end dump in the coke, cover and let finish cooking. Easy super & super delish. (just make sure the soda is room temp, as to not warp your pan)

  • Tabby's stir-fry:1pkg ramen noodles (chix flavor)any veggies you like ( i use carrots, bean sprouts, broccoli)chickenCook the chicken in whatever seasoning  you like.I put in a little EVOO in a pan with my veggies, cook with garlic salt, and lempn pepper, black pepper, salt, over med heat.Cook ramen noodles only. Drain and sprinkle seasoning on the noodles (you only need to use about half the little pkg)Throw veggies and chix on top.

  • Pork chops, marinated in fat free italian dressing. Use the rest of the marinade to cook the chops in. So good. Black bean and cheese enchilladas. Can of enchillada sauce, can of black beans, bag of mexican cheese, tortillas. Pour half the can on the bottom of your baking pan. Fill each tortilla with some beans and cheese. Roll up, and put the seam facing the bottom of the pan. I usually make 6-8. Top with the rest of the sauce, and the rest of your cheese. Put in the oven for 15 minutes at 350 or until everything's warm and melty. I'll keep thinking :)

  • atobias, that sounds excellent.  Pretty much anything slathered in bbq sauce works for me. Chipotle also works for me, but not so much for my H who has been a huge baby about it ever since he found out there is cilantro in the rice.

  • Valley, there is a Chipotle episode you missed.  It had the ghost of Billy Mays hawking a product called Chipotle-Away, which gets the bloodstains out of underwear from rectal bleeding caused by eating Chipotle.  This is automatically what I though of after your post.

  • Beer can chicken: 1 whole chicken, 1/2 can of beer, salt/pepper/seasoning, 1 potato Drink 1/2 can of beer.  Leave 1/2 of beer in can.  Rub outside of chicken w/ seasoning.  Sit the chicken on the can of beer (can goes up it's butt).  Stuff the potato in the neck hole.  Place chicken and can in a baking dish.  Bake uncovered at 400 degrees for 20 min per pound.  No need to baste - sitting up, it self bastes as the juices drip down the chicken.

  • Cilantro in the rice is what MAKES chipotle. That and the lime on the chips. Damn you - now I want Chipotle for lunch and there isn't one for miles.
  • All excellent ideas! Tide, that's awesome.  I've made beer can chicken on the grill before (which I love) but hadn't found a recipe for the oven.  It's a little cold to stand out by the grill this time of year.
  • I made corned beef and cabbage yesterday - good for a damp, chilly day. 1 package of corned beef, 1 head cabbage, halved, cored and cut into 1 inch strips, potatoes and carrots cut into 1 inch pieces. Cover corned beef in water.  Add the little seasoning packet that goes with it.  Bring to a boil, then allow to simmer for 50 min per pound.  Once beef is cooked, remove from water.  Add potatoes and carrots.  Cook about 15 min.  Add cabbage and beef to pot.  Cook another 15 min until veggies are tender

  • You can put beer in a baking pan, and bake your chicken that way, if you want the beer flavor. Maybe that's what Tide's recipe is, I didn't read it yet.You could also use that as your cooking liquid and make chicken in the crock pot.

  • God, I love Chipotle's guacamole.  DH and I have our birth class tomorrow and we meet for a quick bite before hand.  Perhaps Chipotle is in order for tomorrow.  Hmmm.

  • I've never had Chipotle. The closest one that I know of is Atlanta.

  • Loopy-If you're referring to bbq chicken quesadillas then that makes two of us.  So good!
