I'm making enchiladas for FI's birthday/my birthday (his is today, mine is tomorrow). Mmmmm veggie goodness

They take around 2.5 hours to make, so they're definitely a special-occasion-only thing.How bout the rest of y'all?

As soon as I get home (which is looking like pretty late at this point), it'll be sauteed catfish, roasted red potatoes and steamed broccoli.

Heh. Probably buffalo chicken-flavored dip, applesauce, and maybe some hot chocolate. As you may be able to tell, I am stuck on a soft food diet. But at least I'm getting creative!

I am happy to report that I was extremely successful in making lasagna for my very first time! I had my friend and her kids over, and we had cheese lasagna, garlic bread and salad. Yum!

I haven't made lasagna in a really long time. Uuuugh. My boxed pasta doesn't sound good any more because now I want even more cheesy goodness. Congrats on successful lasagna. The great thing about lasagna is that it's pretty hard to mess up, and when it's good it's good.
