Most venues do not have food tastings anymore.  The ones that do, require a signed contract and you would have a tasting a month or so before the event.  Confirm w/the venues directly.

We did a food tasting at our venue in SI (the staaten) but it was after we signed the contract and about 2 months before the wedding so we could make any changes that we wanted (we didnt, they were awesome). It was free.

The tasting we did was about 2 months before our wedding in order to choose the menu, long after we signed the contract.

We did a tasting at our venue one month after signing the contract. We didn't have to pay because they served appetizers and entrees from a wedding that was happening that evening.

Our tasting was free but we had to have a signed contract before we got to that step.
