There are several guests of friends that I either never met so don't know their name (I'm not sure said person even knows who they are bringing yet) OR I met them maybe 3 times so I know their first name (not sure they know mine though) but not their last.  SO on the escort cards do I say Jane Doe party Table 1, or Jane Doe and Guest Table 1, or Jane and Jon Table 1.  Is it necessary that I determine everyone's name?

Call your friends and get correct spellings of first and last names for as many of their guests as you can.  If you have a friend tell you "I'm not sure who I'm bringing" then you can write "John Doe and Guest".

Generally, escort cards can/should be one of the very last things you make in the week leading up to the wedding.  That gives you a chance to collect all RSVPs so that you can save time by not making cards for people who won't be attending.  You could save these few until the very end to give your guests a chance to solidify plans with their dates - then you would know names.

You can also make them early by doing them for everyone you invited and filling in the table numbers later.  That's what we're going to do - if we need to remake a few because people's relationships change, that's fine - but it would stress me out to do them all at the very very end.  We will toss the ones for guets who RSVP no.  I would do the ones you can now, and wait until you are getting RSVPs back to track down the names of people's guests.
