Help me with dinner?

So I have no stove right now, and I wont until next wednesday. I kind of overlooked the fact that I would have to cook vegetables in some way for dinners. Normally I saute or steam, and I very rarely if ever roast anything.

Currently I have baby carrots, spinach, zucchini, frozen beans, mushrooms, onions, red/yellow/orange peppers and "canned" tomatoes.

Is there anything I can make with one or two of those ingredients, on the bbq?

  • Use tin foil and wrap the veggies in a "bag" of sorts and it will make it a steam bath for them :)
  • You can definitely do zucchini, peppers, and onions on the grill. Toss them with a little olive oil, salt, and pepper, and whatever other seasonings you want and put them directly on the grill grates until they're however done you want them to be, or wrap them in foil and stick the whole packet on the grill grates for a few minutes.

  • do you have tin foil?  you can wrap some peppers in there and season them a bit and toss them in the grill.  Onions too!

  • Got aluminum foil? You can dress the veggies with olive oil or a bit of butter, a little salt and pepper, and whatever herbs you've got around (I like rosemary and thyme), fold them up into a packet, and roast them.

    My mom makes grilled veggie kebabs with peppers, mushrooms, zucchini and onions in the summer. She cuts them into 1 or 2 bite pieces and puts them on wooden skewers and grills them with a little olive oil.

    While we're talking about food... I was going to mention these to you because I love them.  I know you are a meat eater (so am I), but the schneiders meatless chick 'n burgers are so good and I think that everyone should know about them.  Here's a link to all their meatless products.  I haven't tried anything else yet.  But, it seriously tastes like a McChicken/wendy's chicken sandwich.

  • Oh man, grilled peppers, onion and zuchinni are absolutely delicious :)

    Do you have a microwave? It's not the best but I've managed to somewhat steam veggies by just filling a bowl with about 1/2 inch of water, pile in veggies, microwave on high 2 minutes.
  • If you do go the kebab route and use wood skewers, don't forget to soak those badboys in water for 15 minutes or so or they'll catch fire.

    I actually dont know where my skewers have gone, they were moved at some point during the kitchen reno and I dont know WHERE they ended up. I do have those disposable metal roasting tins in various sizes as well as tinfoil, though to be honest i am not sure how MUCH tinfoil, I would have to look. The veggie kabobs sounds the best to me though.

    Ditto PP on kebabs--use the mushrooms, zuchini, peppers, and onion. I usually season them with zesty italian dressing.

    If you're in a rush and have access to a microwave, you can cook your chopped veggies in there with a little bit of water at the bottom for a minute or two (the equivalent of parboiling, which is what I do when I'm in a rush on veggie kebabs), then string them and finish them off on the grill.

    That sounds worth a try, I will look for them the next time we do groceries, what section are they in? Frozen, bacon (theres always lots of schneiders there), orsomewhere else? I need to make sure my husband doesnt see meatless though or he wont eat them. Hes a butt like that.
  • You can use the metal roasting tins on the grill too. Just watch them and keep moving the veggies inside. And don't forget seasoning. Yum!

    Hmm I might just do that then, use one of the tins and throw in zucchini, onion, peppers and some carrots. I have a garlic craving too so I will proabably season with that, salt and olive oild?
  • Yeah just make sure you have a liquid in there. Olive oil will work.

    At Safeway I find them in the frozen section with chicken fingers, and stuff like that.  Not the frozen section with all the frozen veg.  They're in a bag kind of like  how frozen fruit comes.  So so so good.  I would have never tried them if my sister didn't have one.  I had a bite and fell in love.
