Question about providing alcohol

My FI and I are thinking of providing the alcohol for our reception.  We would want to host a full open bar and have come up with the following list of alcohols to be served:

Wine (red and white)
Sparkling wine
Sangria
Beer
Vodka (Maybe 2 different flavors)
Whisky
Gin
Rum
Scotch
Cordials (peach schnapps, triple sec, etc.)

Can you think of anything I'm leaving out?  Also, how much of each do we need to buy for 75 people?  I know that more people will drink vodka than scotch.  Is there a rule for how many bottles of alcohol to provide per person?  We DEFINITELY wouldn't want to run out of alcohol at our wedding!

We will also have non-alcoholic sparkling grape juice and non-alcoholic beer available (in smaller quantities) for the few people who don't drink.
